[NaBloPoMo] Chocolate Chip Cherry Nut Bread

Ok so this isn’t a food blog,  it doesn’t mean I can’t share a recipe or two, especially with the Holidays right around the corner.

This recipe is a family favorite at Christmas-time.

Chocolate Chip Cherry Nut Bread

2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 cup shortening
1 cup buttermilk
2 eggs
1 cup walnuts, chopped (opt)
1/2 a small jar of maraschino cherries, cut in half (reserve juice)
1/4 cup maraschino cherry juice
1-16 ounce bag chocolate chips (we use semi-sweet)

Heat oven to 350° F. Grease bottom only of a 9 X 5 X 3″ loaf pan. Beat all ingredients except nuts, cherries & chocolate chips in a large bowl on low speed for 15 seconds. Beat on medium speed 30 seconds, scraping the bowl constantly. Stir in nuts, cherries and chocolate chips.
Pour into pan. Bake for 1 hour 10 minutes to 1 hour 15 minutes, or until a toothpick inserted in center comes out clean (crumb free–there will be chocolate remnants on it).

I have also used this recipe using mini loaf pans. They make great gifts.
